Gluten Free Chicken Fajita Nachos made with Schwartz Mexican Fajitas Flavour Shots

All the flavor of a classic Mexican dish combined with the convenience of nachos! Plus, it's gluten free!

Gluten Free Chicken Fajita Nachos 

Every time I go to a Mexican restaurant, I get the same thing: chicken fajitas. In college one year, I stumbled across a little Mexican restaurant in the suburbs of Greensboro, North Carolina, that served up my favorite Mexican dish in an unusual way: slathered over baked nacho chips. Hellllllooooooooo! It was genius: the convenience of nachos and the unmistakable flavor of chicken fajitas? I was sold.



Ever since that encounter, I've had chicken fajitas disguised as all manner of Mexican grub: from chicken quesadillas to chicken fajita rice bowls and chicken fajita sliders and salads and pasta. But my favorite nontraditional method? Over nachos. So when the lovely people at Schwartz sent me a parcel containing one of their new products: a Mexican fajitas flavour shot pot, I immediately wanted to recreate those nachos.

I love cooking Mexican food, but it can be so difficult to get true Mexican flavors being so far away from the country. Lots of chillies and spices that are native to Mexico and prevalent in Mexican food don't even make it across the pond and those that do, come at such an inflated price it'd almost be cheaper just to hop on a plane and head to Mexico to raid the markets myself!

Then there's the fact that spicing in Mexican food is an exquisite science. It's not just chillies chucked in a pot. There's layers of flavors, waves of heat and fire that draw us in and excite our tastebuds.That type of flavor handling can be pretty difficult to recreate in my tiny British kitchen. Add to the pressure the rush through the week to put dinner on the table and the thought of chopping chillies, making mole or grinding elaborate rubs for fajitas really becomes unappealing. That's why this little flavour shot is so important: all the hard work has been done for you. From the spicing to the perfect amount of oil, all you need to do is add the basic components: the meat and the veg. These Schwartz Flavour Shots were made for busy weeknight meals; they were made to pack a wallop of flavor and to elevate the ordinary into the extraordinary and they do!

Ingredients:

For the nachos
1 pot Schwartz Flavour Shots Mexican Fajitas
1 red onion, sliced
1 bell pepper, deseeded and sliced
1 bag nacho chips
1 jar salsa
500g boneless, skinless chicken thighs, sliced
cheese

Baking the nachos gives them a crisper texture and a deeper flavor

Instructions:

Gluten Free Chicken Fajita Nachos
  1. Preheat the oven to 200c/400f.
  2. Heat a skillet and add the chicken and the entire contents of the Schwartz Flavour Shots pot.
  3. Let the chicken cook in the oil and seasonings for about seven minutes.
  4. Add the vegetables and continue to cook for a further three minutes.
  5. Meanwhile, arrange the nacho chips on a baking tray. Spoon the cooked chicken and vegetables over top. Sprinkle with cheese and bake in the oven for five to seven minutes or until the chicken is cooked and the juices run clear from the thickest slice of chicken.
  6. Serve with salsa.
