Gluten Free Chicken & Raspberry Salad with Black Pepper Dressing

I've always had a love for salads, but after my Coeliac Disease diagnosis, I find myself eating more and more salads for lunch. Suitable gluten free lunches can be pretty hard to come by, and even when opting for salads, most salad dressings tend to contain gluten. That's one reason why I love this raspberry and black pepper dressing from Atkins & Potts ... it's gluten free!

This is one of those fun salads, where there are no rules, and no set recipe. You could substitute whatever you want. Don't like chicken? Try it with deli-sliced cooked beef or a good, oily fish like mackerel. And if you don't dig spinach, you could swap the greens for curly kale, arugula/rocket or romaine lettuce. And skip the pine nuts if they don't take your fancy; cashews, pecans and peanuts are always phenomenal in salads. Add in some grated carrots, cranberry flavored raisins or golden sultanas. Slices of juicy ripe peaches or mango would also balance really well. You could even add in some cooked gluten free pasta or orzo. See? The possibilities are endless!

For the salad
cooked chicken breast
spinach leaves
red pepper slices
cherry tomatoes
cucumber slices
pine nuts

Gluten Free Chicken & Raspberry Salad with Black Pepper Dressing

Instructions:


  1. Toss the spinach leaves with pine nuts, cucumber, tomatoes and red pepper slices.
  2. Finish the salad with sliced cooked chicken, raspberries, a bit of salt and a good drizzle of the dressing.
