Gluten Free Butternut Squash & Bacon White Pizza

Butternut Squash White Pizza with Bacon

Hi, this is Sarah from The Chef Next Door! I'm so excited to be back again and sharing another delicious recipe with you. It's finally Fall here! The leaves are changing, the weather is cooler, and the days are getting shorter. One of my favorite things about fall is cooking with seasonal ingredients. Although pumpkin is my all time favorite, squash is a very close runner up! And I love using it in different ways, in recipes you don't see every day.


This Butternut Squash and Bacon White Pizza is definitely out of the box! Roasted squash and crispy bacon layered on a creamy, delicious white sauce. It's absolutely out of this world. Skip pizza delivery this week and give this homemade treat a try!

Ingredients:

For the pizza:
1/4 cup arugula or rocket, torn
1 pound gluten free pizza dough
1 butternut squash, peeled, cleaned & diced
2 tablespoons olive oil
3 sliced cooked bacon, chopped
white sauce (recipe to follow)
dash or two red pepper flakes
pinch salt
black pepper to taste

 
For the white sauce:
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon fresh rosemary, chopped
1/2 cup grated Parmesan cheese
1 cup milk
2 tablespoons unsalted butter
3 tablespoons gluten free flour
pink black pepper

Homemade Butternut Squash Pizza

Instructions:

  1. Preheat the oven to 425 degrees. 
  2. Spread the diced squash on a baking sheet, sprinkle with salt and pepper and drizzle with olive oil. Using your hands, mix it all together so that the oil is covering all the pieces. Roast the squash in the oven for 15 minutes, then set it aside to cool.
  3. While the squash is cooking, make the sauce. In a small saucepan, over low heat, melt the butter. Add the flour and whisk until thoroughly combined. Slowly whisk in the milk, stirring constantly so no lumps form. Add the remaining ingredients. Allow it to simmer for just a few minutes, then remove it from the heat and set aside to cool.It will upon standing.
  4. Once the squash is done cooking, increase the oven temperature to 450 degrees. Roll the pizza dough out onto a pizza stone or baking sheet. Spoon the white sauce all over the dough, then add the cooked squash and crumbled bacon. Sprinkle with a dash or two of red pepper flakes. Bake the pizza until golden brown and crispy, about 20 minutes. As soon as the pizza comes out of the oven, sprinkle the torn arugula over the top. Slice into wedges and serve. Bon Appetit!
