Gluten Free Prawn Toasts

This classic Chinese takeaway has been given a gluten free makeover; these prawn toasts are divine & easy!

Gluten Free Shrimp Toasts

I'd never heard of prawn toasts until I moved to the UK, but they are one of the staples of Chinese takeaways here. They're basically pieces of toast fried with prawns (shrimp) and spring onions and ginger. They're extremely easy to make and really tasty. A lot of time they are finished with sesame seeds and served with sweet chilli sauce.

Before my Coeliac Disease diagnosis, I loved prawn toasts and would it have it pretty much every time we had a Chinese meal, so finding a way to make them gluten free was top of my list and I'm so pleased with my achievement!

This is the final dish from my Amoy Chinese New Year banquet and one that I am extremely happy with! Prawn toast is perfect as an appetizer or simply as an accompaniment to a Chinese meal. You'll be shocked how easy it is to make and you'll enjoy it; trust me!

Ingredients:

For the prawn toasts
1/4 cup minced spring onions
1/2 cup corn flour
1 teaspoon ginger
1 egg
6 slices white gluten free bread
100 grams prawns, cooked and deveined
salt
white pepper
sunflower oil for frying
sweet chilli sauce for dipping


Gluten Free Prawn Toasts

Instructions:


  1. Combine the spring onions, corn flour, ginger, egg, prawns, salt and pepper in a food processor and pulse until the mixture is a chunky and textured paste.
  2. Cut the crusts off of the bread and then cut into triangles.
  3. Preheat the olive oil to 350 degrees Fahrenheit for frying.
  4. Spread some of the prawn mixture over each toast.
  5. Fry the toasts in batches, prawn side down for a bit a minute on each side and then flip over and continue to fry until the toasts are golden brown.
  6. Allow the toasts to drain to remove excess oil.
  7. Serve with sweet chilli sauce.
