Gluten Free Nutella and Peanut Butter Microwave Cookie

My peanut butter and Nutella microwave cookie has been given a gluten-free makeover!

Gluten Free Nutella and Peanut Butter Microwave Cookie

A few years ago, before my Coeliac Disease diagnosis, I made this mug cookie with traditional flour. I wanted to re-share it with two slight adjustments that will make it suitable for people who need to or choose to avoid gluten. The changes are simple, I removed the vanilla (because I liked it better without, but you can keep it in-it's always gluten-free)and I swapped an equal portion of flour with ground almonds. Easy!

Ingredients:

For the Gluten Free Nutella and Peanut Butter Microwave Cookie
1 tbsp butter
1 tbsp smooth peanut butter
1 tbsp (heaped) Nutella
1 egg yolk
2 tbsp brown sugar, packed
3 tbsp ground almonds


Gluten Free Nutella and Peanut Butter Microwave Cookie

Instructions:

  1. Put peanut butter, Nutella and butter in a mug.
  2. Microwave for about 20 seconds, to soften.
  3. Add the sugar and stir well.
  4. Stir in the egg yolk until fully incorporated, then add the ground almonds.
  5. Microwave on full power for about 3 minutes, checking for doneness every 30 seconds or so.
