You know, it makes complete sense for Valentine's Day to be celebrated in winter; there's just something about those long, dark nights that was made for cuddling. Whether you make this romantic brew for your love first thing in the morning or sip it together lazily in bed on Valentine's night, you won't be able to deny how lovey-dovey it makes you feel. Maybe it's the spice of cinnamon, the floral rose petals or the comfort of warm milk--whatever it is, turn the lights down low and embrace those amorous feelings! There are two essential parts to this recipe: a simple but important chai masala spice mix and then the actual brewing of the beverage. Plus, I'll share my trick for getting coffee-house style frothy milk without the need for fancy gadgets.

Ingredients:

For the chai masala
1/2 teaspoon ground ginger
1/2 teaspoon cardamom seeds, removed from shells
1/2 teaspoon nutmeg
1/2 teaspoon all spice
1/2 teaspoon edible dried rose petals
1 teaspoon ground cinnamon
pinch black pepper

For the chai latte
1/2 cup water
3/4 cup milk
1 teaspoon chai masala
2 teaspoons brown sugar
2 tea bags black tea such as English Breakfast Tea
freshly ground cinnamon

How to Make an Authentic Chai Tea Latte

Traditionally, chai is hot and creamy, fragrant with spices that are enhanced by sugar. It's a popular Indian drink and frothing the milk to make a latte is an optional way to add a bit more decadence. You don't need an expensive coffee machine to enjoy nicely frothed milk; simply use an immersion or stick blender and froth your milk straight in the pan to aerate it and give it that foamy texture.

Don't be afraid to play around with the spicing in this recipe, by the way. Introduce your favourite spices, take away those you don't like; add more of this, less of that; make it your own and unique to your tastes. A good masala (spice mix) should reflect your personal tastes. To make chai tea lattes for more than one person, simply double or triple this recipe. And remember: store your leftover chai masala spices in an airtight container away from direct sunlight and they'll keep for a month...if you can wait that long before having this indulgent treat again!

Instructions:

  1. Make the chai masala by combining all of the cinnamon, ginger, cardamom, nutmeg, all spice, rose petals and black pepper in a mortar and pestle. Grind together until it is a fine powder. Alternatively, you can use a spice grinder.
  2. Place the milk, water, brown sugar, tea bags and one teaspoon of chai masala into a saucepan and heat, continuing to stir or whisk so that nothing catches and burns. Heat until boiling, then remove from the heat.
  3. Pass the tea through a sieve and return to the saucepan and bring back to the boil.
  4. Froth the tea with an immersion blender until foamy and serve hot with extra rose petals and freshly ground cinnamon.
