Gluten Free Spanish Chicken One Pot

This is the time of year, I always grow restless of the relentless gray days and long for vast blue skies pierced by a shining sun. Before we became parents, we'd often skip out of town in February and head south to mainland Spain or one of its charming islands, like Menorca. Menorca, with its fantastic produce and meaty chorizo was the inspiration behind this recipe, too.

That's one of the greatest things about living in the UK--the short, affordable flights to Spain to chase the sun! This year, though, with our son in school, we had to make due with bringing the taste of Espana to our dinner table. I was approached by Monarch to create a recipe that celebrates Menorca and immediately thought of two classic Spanish combinations: sweet juicy orange and spicy chorizo!


Ingredients:

For the chicken, chorizo & orange one pot
1/2 cup orange juice
1 garlic clove, diced
1 large orange's zest
1 kg skin-on, bone-in chicken thighs
2 tablespoons olive oil
2 red onions, quartered
3 large potatoes, chopped
finely chopped fresh parsley
salt and pepper

During a busy week, I don't always feel like cooking. Nothing can be more soul-saving than whipping up a delicious one-pot meal that tastes like you spent ages slaving over it. That's exactly what you'll get with this dish! There's not even any need to brown the chicken beforehand, just make sure it's well coated in that golden Spanish olive oil and the skin will crisp up nicely. Seal in the moisture by basting some of the orangey-red cooking juices over the meat and potatoes once during cooking and you'll have an easy, effortless one pot meal your family will devour.

Instructions:

  1. Preheat the oven to 180c.
  2. Drizzle olive oil into the bottom of a large roasting tray and place the chicken thighs skin-side down. Swirl them around so they are fully coated in the oil.
  3. Add chunks of chorizo and potatoes to the pan along with the onion and the garlic.
  4. Season with salt and half of the orange zest.
  5. Turn the chicken thighs over so they are skin-side up and season again with salt and the remaining orange zest.
  6. Drizzle in more olive oil if necessary to coat the potatoes and pour in the orange juice.
  7. Roast uncovered for 30 minutes, removing the tray to baste the meat and potatoes with a spoon. Be sure to cover each piece of chicken and as many potatoes as possible with the cooking liquid. Return to the oven for the final 30 minutes.
  8. Sprinkle over finely chopped fresh parsley, a bit more salt and black pepper before serving.
