Best Ever Gluten Free Homemade Cheesy Garlic Bread

When it comes to carb-laden comfort food, it doesn't get much better than hot-from-the-oven buttery garlic bread smothered in cheese. When I knew I'd have to give up gluten, one of the things I mourned was garlic bread and big bowls of pasta. Thankfully, gluten free pasta is easily found these days, but a good garlic bread that didn't taste like cardboard? Well, that was tricky.

Traditionally, garlic bread is made with slices of French baguette--perfectly crusty and unmistakably delicious. But trying to replicate the crusty-cum-chewiness of a proper baguette without that essential stretchy gluten is pretty damn tough. I'd say it's impossible. Since a baguette was out of the question, I went seeking an alternative and found it in this cob of gluten free sourdough! All I'll say is: holy yum, y'all.

Ingredients:

For the garlic bread
gluten free sourdough loaf
olive oil
garlic granules/powder
shredded cheese
parsley (optional)

How to Make Homemade Gluten Free Cheesy Garlic Bread

Gluten Free Garlic Bread Served with Spaghetti Carbonara

This "recipe" doesn't give measurements because you should make the garlic bread to your tastes. I like my garlic bread super garlicky and with lots of oil and cheese. But I know not everyone does, so the easiest thing to do is to give you the basic list of ingredients and let you make it the way you'll love it most. If you do get really stuck and find you can't find the balance, feel free to pop me a comment and I'll help you out!

Instructions:

  1. Preheat a grill/broiler to 200c/400f.
  2. Line a baking tray with foil, dull side facing up.
  3. Slice the bread as thin or as thick as you like.
  4. Brush olive on both sides of each slice and place on the tray. Sprinkle garlic granules on the side facing up and grill for 2 minutes.
  5. Remove from the grill, flip over and sprinkle with garlic granules. Return to the grill for a further 2 minutes.
  6. Remove from the grill and flip back over to the first side and sprinkle with cheese. Grill again for about a minute or until the cheese is melted.
  7. Sprinkle with parsley, if using, and serve hot.
