Gluten Free Barbecue Chicken Thighs in the Oven

Y'all, it's hotting up outside! Okay, not in this exact moment, but in general, we're careening towards warmer days! As soon as it gets warm enough to hang the washing on the line, I immediately start thinking of barbecues--nothing beats the taste of food cooked over an open flame. But living in Manchester, those days of optimum barbecue weather are few and far between. All hail the power of barbecue in the oven!

Staying true to my southern American roots, I served this barbecue chicken with the most incredible mashed potatoes and creamed corn.

How to Barbecue Chicken in the Oven

If (and that's a very big if) there are any leftovers, they would make an excellent lunch the next day. This recipe would also be great for a picnic, too! I used boneless chicken thighs because they're naturally succulent and juicy and much tastier than chicken breasts, but this recipe would be great with any cut of chicken. Swirl a pack of drumsticks in that sauce or smother a tray of chicken wings.
