Gluten Free Mini 4th July Pancakes

4th of July is arguably, America's biggest holiday and is generally characterised by classic barbecue items: hot dogs and hamburgers, fresh lemonade and apple pie with ice cream. Breakfast isn't usually a big deal on Independence Day, so I wanted to share a light option that kids will love and that will get everyone in the festive mood! This recipe is also perfect for expats like me, who may not be in the States on the 4th and can't celebrate properly.

You can use any fruit that you like, I chose blueberries, strawberries and blackberries because they are my favourite and are seasonal this time of year. Plus, if you take the kids to a fruit farm to do a bit of Pick Your Own before, it creates a nice opportunity to get them involved with learning about food from farm to plate.

I piped Greek yogurt onto these pancakes, but you could just serve them with fruit and syrup as normal. Try slicing up a banana and serving it directly on the pancake with a drizzle of syrup if you prefer. You can also chop up the fruit and put it into the pancake batter...or use chocolate chips instead! Endless possibilities!

Ingredients:

For the mini gluten free pancakes
1 large egg yolk
1 large egg
1 tablespoon caster or granulated sugar
100 grams Greek yogurt
175 grams gluten free self-raising flour
250 ml whole milk
fresh fruit
icing/confectioner's sugar

Let me let you in on a little secret: these mini gluten free pancakes are perfect for breakfast any time of the year. I tend to make up a big batch of them on Saturday morning and freeze them for breakfast through the week for my 5 year-old son. All I do is pop them in the microwave for 30 seconds and serve them with a bit of syrup for a quick, breakfast. He loves them and it saves so much time in the mornings before school.

Instructions:

  1. Combine the flour, egg, egg yolk, sugar and milk in a large bowl and whisk until the batter is smooth and slightly thick. If it's too thick, add a bit more milk; if it's too thin, add a bit more flour.
  2. Pipe the pancake mix into a piping bag or zip-seal bag and pipe small discs into a hot non-stick pan.
  3. Fry the pancakes for about 30 seconds to a minute on each side and continue until all the pancakes are done.
  4. Top with a bit of Greek yogurt and a piece of fruit and sprinkle with icing sugar before serving.
