Coffee purists, avert your eyes. As I come to grips with my inability to consume dairy, I've been hunting for substitutions that taste like the real deal and don't take longer to prepare. And the first thing on my list was my morning cup of coffee. I'm one of those "But first, coffee" gals through and through and previously relied on those instant coffee sachets for my quick fix. Since needing to avoid lactose, those are out of the question, so I scrambled to come up with an alternative.

Professional Homemade Dairy-Free Vanilla Latte with Instant Coffee



All you need for the perfect professional latte is instant coffee or instant espresso--they both work and produce beautiful results! Dairy-free milk of your choice: almond milk, goat's milk, coconut milk or my personal favourite: lacto free cow's milk. Add in a shot of flavour with some vanilla extract and sweeten it with sugar, if you prefer. You will need a milk frother; this is the one I bought. You are literally mere minutes away from feeling like you're knocking back overpriced lattes at your favourite coffee shop. Result!

Ingredients:

For the latte
1 teaspoon instant coffee or instant espresso
1 teaspoon vanilla extract
30ml hot water
70ml dairy-free milk
sugar (optional and to taste)

How to Make a Professional Latte with Instant Coffee

Lattes are my coffee drink of choice--they're so indulgent and frothy; I can't resist! I'd want nothing more than one of those huge, expensive coffee machines with the milk frother (and I'll take a super fit barista on call 24/7 to whip them up for me, too). But my kitchen and budget are too small. So while wandering around my local Ikea a few weeks ago, I laid my eyes on a battery-operated whisk that I had to have. The rest, as they say, is history.


Instructions:

  1. Boil the kettle.
  2. Warm the milk in the mug you will be drinking from by placing it in the microwave for one minute.
  3. Scoop out the espresso powder or instant coffee into an espresso cup or another mug.
  4. Pour 30 ml of boiled water over the espresso powder and stir. Set aside.
  5. Spoon the sugar (if using) into the warm milk and then froth for about 30 seconds. Do not let the frother touch the bottom of the mug and remember to slowly lift it up and down so that all the milk gets foamy.
  6. Add the espresso to the milk, stir well, enjoy and feel smug.
