Vermicelloni & Meatballs 

 A cross between spaghetti and vermicelli, vermicelloni are thick strands of pasta air-dried for 36 hours before being packaged. Vermicelloni are a "meaty" noodle--the thickness is nice and works well with meatballs and a red sauce or ragu. We especially liked how this pasta tastes when cooked al dente.

Distributed by the Black Dog Delicatessen, this vermicelloni is made in Italy to a traditional recipe. It's perfect for a special occasion and tastes noticeably different from other pasta noodles. The Black Dog Delicatessen produces a range of wonderfully flavored Italian store cupboard staples, all prepared from traditional recipes.

Ingredients:

For the
1 package Black Dog Delicatessen Vermicelloni Noodles
1 portion of the best ever turkey meatballs
1 portion of zesty tomato sauce
Cheddar cheese, to taste


Instructions:

  1. Prepare and make the best ever turkey meatballs.
  2. While the meatballs bake, make the zesty tomato sauce.
  3. Fill a large pot of well-salted water and bring to a rolling boil before adding the vermicelloni. There were no cooking instructions on the packet, so I it was trial and error. I cooked the first batch for the length of time I'd cook spaghetti (8 minutes) and it was under done. The second batch, I cooked as if it was fettuccine noodles (12 minutes) and they were over done. Somewhere in the middle was the perfect amount of time for us.
  4. Add cooked meatballs to the sauce followed by the drained vermicelloni. If your sauce is a bit thick, loosen it with a bit of the pasta cooking water.
  5. Arrange the noodles and meatballs on a serving platter ad sprinkle with grated cheese.
