Gluten Free Mini 4th July Pancakes

4th of July is arguably, America's biggest holiday and is generally characterised by classic barbecue items: hot dogs and hamburgers, fresh lemonade and apple pie with ice cream. Breakfast isn't usually a big deal on Independence Day, so I wanted to share a light option that kids will love and that will get everyone in the festive mood! This recipe is also perfect for expats like me, who may not be in the States on the 4th and can't celebrate properly.

You can use any fruit that you like, I chose blueberries, strawberries and blackberries because they are my favourite and are seasonal this time of year. Plus, if you take the kids to a fruit farm to do a bit of Pick Your Own before, it creates a nice opportunity to get them involved with learning about food from farm to plate.

Orange Julius is a staple American drink, popular in shopping malls and on boardwalks at beaches, it's a cool and frothy mix of concentrated orange juice, milk and ice. I've swapped the cow's milk and replaced it with delicious coconut milk to make it suitable for vegans. After trying VitaCoco's new coconut milk, I've been on a bit of a coconut kick!

It is hard to work today; hard to carry on because my city has been tainted with the cowardice of terrorism. Because children who should have been floating on that post-concert euphoria, singing at the top of their lungs and dancing in the streets were screaming and in tears and running for their lives. And I am angry that someone would think so little of their precious lives to act in such a cowardly way.

We live within two miles of the M.E.N. We have traipsed up the stairs from Victoria Station past the platforms of commuters up the ramp to the venue and down into the belly of the event space, surrounded by thousands of innocent people as we sang and danced to Florence and the Machine, to Stevie Wonder, to Train, to Depeche Mode, to The Cure .... the list goes on and on. That arena is my arena. If a big show comes to town, that's where we go. A place we have been to countless times; a place that is at the very heart of Manchester--literally and figuratively. And that place was under attack last night.

Gluten Free Cinnamon & Spinach Chicken Curry

Not every curry is full of spices that make your eyes water and your nose run. Some curries have a sweetness to them and are just comforting and lovely, like this one. Sure, there's a little kick from the cinnamon but sweet tomatoes, rich spinach and a dollop of yoghurt tame that right down. I originally shared this recipe on my blog back in 2013, but since then, I've adjusted the spices a bit more, halved the amount of Greek yogurt and swapped the gluten-filled orzo I used to serve it with for rice. It's still delicious, though--and great for leftovers the next day, warmed and rolled in a gluten free wrap? Yas, please.

Piles of pilau rice--fragrant lightly spiced rice served with vegetables or nuts--usually accompany a curry, but I wanted something a little less heavy on the spice and served up simple basmati with a knob of butter forked through, seasoned with salt and sprinkled with golden linseeds because they are so good for you and more than just a topping for a yummy vegan butternut squash and leek soup.

Breakfast is my absolute favourite meal of the day and I am an oatmeal fiend. So much so that it's bordering on obsession, and when I saw the challenge to develop a recipe using Vita Coco's new coconut milk, I immediately thought of creamy oatmeal.

I love a gimmick. And I love eggs, so when I saw cloud eggs trending on Instagram, on Twitter, on actual legitimate news sites I leapt at the chance to try them. It's like eating egg-flavoured cotton candy. Barf, barf, barf. I couldn't even get past the texture to try more than two forkfuls. This is one trend that needs to die quickly.
