Low FODMAP Diet & IBS Symptoms Information

Free Low FODMAP Diet Food Chart

IBS or Irritable Bowel Syndrome is a digestive issue plaguing millions of people around the world and one of the most effective methods for combating the uncomfortable effects of an IBS flare up is to follow a low FODMAP diet.

FODMAPs is an abbreviation for a group of complex molecules found in many foods called Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. FODMAP is definitely easier to pronounce than all that! Some people have problems absorbing these molecules; when this happens, the molecules become a food source for bacteria that naturally lives in the large intestine. When the bacteria digest or ferment the FODMAPs,  symptoms of IBS occurs.

Gluten Free Vegan Peas Pilau Rice

Pilau rice is one of those staple dishes that can be manipulated easily and it's one of the easiest ways to elevate a boring bowl of rice. Pair it with just about any curry and you've got a winning meal, but it was absolutely perfect with this gluten free 20 minute massaman beef curry!

Vegan Gluten Free Peas Pilau Rice Side Dish

Don't be intimidated by this dish--it may seem like a bit of a strange process for cooking rice, but trust it. It'll be tasty and full of flavour! I've seen peas pilau dishes in a number of curry houses that use two different types of peas. I've opted for Petits Pois because I love how tender and sweet they are, but you can use whatever is your favourite!

A beef massaman curry is basically when pot roast meets curry. It's got many of the delicious elements of a classic Sunday pot roast dinner like wonderfully marbled beef that melts in your mouth and hearty whole potatoes and it has the essentials of a good curry like a thick gravy or sauce and an interesting flavour profile.

Gluten Free Dairy Free Coconut Lemon Loaf Cake

I am obsessed with lemon cakes--a refreshingly tart and moist lemon drizzle cake is the anecdote for righting a lot of wrongs in life. Most people say when life hands you lemons make lemonade. And while I do love a nice glass of homemade American-style lemonade, I love cake more. So when life hands us lemons in this house, we make decadent cake. This one, in fact.

Dairy Free Low Fodmap Gluten Free Coconut Lemon Moist Loaf Cake
Check out the crumb on that gluten free cake! Phwoar!
Look guys, this cake is easy peasy and oh-so-delicious. It's super moist thanks to a little cake baker's secret weapon and a trick I picked up here in the UK. But it's also nicely dense and it has a nice "crumb" as profesh bakers would say. All of that aside, here's what you really need to know about this babe of a cake: it's gluten free, dairy free and low FODMAP friendly. It's also not overtly sugary so the lemon really stands out and the hit of coconut you get when that unmistakable scent wafts toward you?

These super quick sandwiches were born out of necessity and as an homage to a childhood favourite, hot ham sandwiches. And I'll admit this straight away, there is no Parmesan cheese in this recipe because actual Parmesan has dairy, but if you're cool with consuming dairy feel free to swap my dairy free alternative for full blown Parm!

Step back to the time of the dinosaurs with Manchester's latest family-friendly attraction in the leafy Philips Park or catch it in other UK parks.

Fearsome Dinosaurs Delight & Thrill Kids Young & Old in Manchester

“It’s like a dream come true” says my six year old Niamh as we metaphorically go back to the Cretaceous and Jurassic periods in Philips Park, Manchester. Brachiosaurus, Pteradons, T-Rex and Ankylosaurus all feature as part of Jurassic Kingdom which is on tour as dinosaurs by turn delight and terrorise children all over Britain.

A Night in with Parmigiano-Reggiano

Friday, July 14, 2017

The talented Julie from Just the Alps Between Us recounts a night of cheesy indulgence laid on by the Consortium for Parmigiano-Reggiano.

Italy. The land of pizza, pasta and gelato. Of long lunches, lazy days and grandmothers who refuse to believe you are full. Because here, food is more than just a way of fulfilling hunger… it’s a way of life. It's at the heart of all social interactions, bringing families and friends together and is the first thing a parent will ask.

5 Versatile Gluten Free Cookie Recipes

Tuesday, July 11, 2017

Here are five versatile gluten free cookie recipes to master and whip up any time!

If there's anything I've learned from being a mom about the power of food, it's that cookies have magical healing properties. There's not much that can go wrong that the promise of a cookie can't correct when you're a child. Equally, cookies make pretty good bargaining tools too! Cookies are my fallback in the kitchen. Need a quick dessert for a party or a barbecue? Cookies! Require a thoughtful gift for a girlfriend? Fancy cookies! Feeling a bit blue and need to bake to save your soul? Cookies, cookies, cookies!

Bottom line: cookies are muy importante. That's why there's a Cookie Monster. Not a Cake Monster or an Ice Cream Monster.

With these cookie recipes, you can play around with flavours--they're all totally versatile! Use the recipes as a starting off point and then let your imagination run wild and embrace your inner cookie monster!

Sugar Free Orange and Honey Vodka Mojito

It's 5 o'clock somewhere & the perfect time to unwind with a grown-up drink! Vodka is my spirit of choice--at all times there is a bottle in my freezer, ready to add a bit of fun to a bowl of tipsy boozy popcorn or blitz with berries for a frozen vodka martini.

Sugar Free Orange and Honey Vodka Mojito

Vodka mojitos are a perfect way to update a classic mojito and ideal for anyone who isn't a fan of rum. As with most cocktails, this one is super versatile--throw any flavours at it that you'd like. Try skipping the oranges and adding a medley of berries, or get rid of the fruits altogether and go with fresh cucumber or even decadent chocolate syrup. But if you want an easy, sweet and citrusy take, then you can't go far wrong with this recipe with fresh orange and lovely smooth honey!

Ingredients:

For the vodka mojitos
1 lime, juice of
1 orange, peeled, seeded and segmented
2 tablespoons honey
240ml vodka
500ml orange squash, diluted
fresh mint

How to Make a Vodka Mojito

How to Make a Vodka Mojito

A few weeks ago, a friend came over, bearing the gift of a flowering mint plant. The plan had been to spend the afternoon chatting and sipping mojitos and eating gluten free crackers slathered with the most decadent French cheese. Without any white rum in the house, we ended up making vodka spiked lemonade instead--not a difficult compromise, let me tell you! Still, I was left with this gorgeous mini mint bush that just keeps growing and growing and growing. So, every now and then, I prune it back and throw all the leaves into a recipe. Still with no white rum (I really need to add it to the shopping list!) these vodka mojitos were born.

  5. Garnish with mint leaves and an orange segment

Gluten Free Coconut Lime Chicken Curry

This curry is basically a cheat's version of a Thai green curry. It's another one of those 20 minute meals that is perfect for whipping up any day of the week! Plus, the natural sweetness coming from the coconut milk and the teeny amount of optional sugar, makes it really child-friendly. I love a good fiery curry, spicy enough to make your nose run and your eyes water. My husband isn't too keen on spicy foods, so this curry is a nice compromise. It's mild and gentle with coconut and lime, but also, I can easily dice up some more green chilies to kick my portion up and make it eye-wateringly spicy.

This quick chicken curry recipe is dairy free, gluten free, paleo and low fodmap!

Plus, no matter what diet you're on, this recipe is suitable for you as written or easily tailored to ensure it is. It's naturally gluten free and dairy free, it's paleo and low fodmap and also sugar free as the sugar is optional! I've got you covered with this one, fam!

This dish just scream spring and early summer. It's a perfect light option for warmer weather that is still filling and full of all the nutrients and goodness you need. I love the way the flaked salmon adds another dimension to this dish and the fresh squeeze of lemon with the zest is pretty unbeatable. We kept things simple and dairy free in this version, but you could totally grate over a nice hard cheese like Pecorino or Parmesan for an added layer of depth.

Gluten Free 20 Minute Salmon Rice Pilaf

Salmon Rice Pilaf Dish

Pilaf is super simple to make. It's just the generic name for any type of rice dish that's prepared by first toasting rice in fat before boiling. So many rice dishes start out this way like this 20 minute chicken and chorizo paella, or this gluten free risotto and my take on super easy Mexican rice.

http://www.anyonita-nibbles.co.uk/p/recipe-index.html

Instructions:

  1.  Heat one tablespoon of the olive oil in a pan and fry the salmon for about 30 seconds on each side to sear. Don't worry if some of the skin is stuck to the bottom of the pan, it'll add more flavour! Remove the salmon from the pan and set aside.
  2. Add the remaining oil to the pan and fry the garlic and onion until fragrant and translucent, no more than five minutes.
  3. Add the rice and stir to coat in the oil and allow to slightly toast.
  4. Add the chicken stock and the water and cover and simmer until the water is evaporated, about 13 minutes.
  5. Flake the salmon into good-sized chunks while the rice simmers. Once the water has evaporated, stir through the salmon and a good bit of black pepper. Cover and remove from the heat and allow to rest about 10 more minutes.
  6. Stir in the lemon zest and juice, sprinkled over fresh parsley and great over cheese (if using) and serve.
