Gluten-Free Yoghurt Spiced Chicken

This easy gluten-free dish features gently spiced chicken, broccoli and a creamy broccoli sauce!

Making time for home school, cooking meals and running a business during lockdown is extremely tough. Especially as a single parent. These last 11 months have been incredibly difficult and I've found myself taking solace in comfort food and in the joy and cooking. It's been so nice to be able to whip something up that is filling, easy to make and takes really yummy. 

During lockdown, Hello Fresh reached out to me to try one of the recipes on their site. I browsed through dozens of easy-to-cook options before I decided to go with their Yoghurt Spiced Chicken. It sounded like a good base recipe and would be easy to adapt if I wanted to.



I've made this recipe twice since getting into contact with Hello Fresh. The first time, I made it just as the recipe stated and it was delicious and intriguing but I kept thinking about all the variations I could make. So the second time, I deviated from the recipe a bit. I swapped the chicken for salmon and it was incredible. I swapped the kale for spinach, too. Instead of thinning the curry paste with Greek yoghurt, I decided to use cashew milk and OMG, it was incredible! I have to admit, this was my favourite substitution. If I make this recipe again, I'll keep the cashew milk in place of the Greek yoghurt but I'll swap the salmon and chicken with roasted cauliflower instead and make the entire dish vegan and gluten-free. 

This dish is so easy to make - you'll see that the instructions are easy to follow and the method is familiar if you know your way around the kitchen. The only thing you might have difficulty with is finding rogan josh curry paste but just shop around. It's readily available on the high street. 

Ingredients:


For the spiced yoghurt chicken
1 butternut squash
1 pot ground coriander
1 bunch fresh coriander
1 sachet rogan josh curry paste
1 bag kale
1 head broccoli
2 cloves of garlic
75 grams Greek yoghurt
280 grams diced chicken thighs

Instructions:

  1. Preheat your oven to 200°C. Trim the butternut squash then halve lengthways and scoop out the seeds. Chop it widthways into 2cm slices, then chop into 2cm chunks (no need to peel!). Pop the squash on a large baking tray and drizzle with oil. Season with salt and pepper and sprinkle over the ground coriander. Toss to coat and spread out in a single layer. Roast on the top shelf of your oven until golden and tender, 30-35 mins.
  2. Roughly chop the coriander (stalks and all!). Separate the broccoli into florets. Line a large baking tray with foil. Reserve 1 teaspoon of curry paste, and pop the rest in a bowl and add a third of the yoghurt. Season with salt and pepper and stir together. Add the chicken, stir to coat, then pop onto 1 side of a baking tray in a single layer. Pop the broccoli on the other side of the baking tray. Drizzle with oil and season with salt and pepper.


  3. Peel the garlic clove(s) and pop into a square of foil with a drizzle of oil and scrunch to enclose it. Pop on the tray with the chicken and broccoli. When the squash has been in the oven for 20 mins, remove from your oven and turn. Pop it back on the top shelf to finish cooking. At the same time, roast the chicken and broccoli on the middle shelf of your oven until the chicken is cooked through and the broccoli is tender, 12-15 mins. IMPORTANT: The chicken is cooked when no longer pink in the middle.
  4. Pop the remaining yoghurt in a bowl with the reserved curry paste, season with salt and pepper and mix together. Get your washing up done!



  5. When the butternut is cooked, pop the kale on top and drizzle with oil. Season with salt and pepper and pop back into your oven until the kale is tender and slightly crispy, 3-4 mins. When the garlic is cooked, carefully remove it from your baking tray and remove from the tin foil. Mash on your board with a fork and stir it into the yoghurt.
  6. Once everything is cooked, add the broccoli and chicken to the tray with the squash and kale and mix to combine. Add in a splash of the water to the curried garlic yogurt to thin out, and mix. Serve in bowls and drizzle over the spiced yoghurt. Sprinkle over the coriander and enjoy!

Here are the latest lists of gluten free UK Halloween sweets and US Halloween candy from each country's most popular brands in a handy free printable!


When I first emigrated to the UK, Halloween was just beginning to take off as a recognised commercial celebration. While there's still a long way to go before it's celebrated as extensively here as it is in America, it's certainly a nice way to break up the dark nights before proper winter sets in! 

Of course, a holiday where eating is a big part of the focus poses potential risks for people with food allergies. Given the nature of how Halloween candy is often given (in small, individually wrapped sweets or candy from a larger package) it can be difficult to remember if a sweet is gluten free or not. To combat this and to ensure you and your children have the best possible gluten free Halloween ever, I've created two handy lists of Gluten Free Halloween UK Sweets and US Candy and Chocolate from major suppliers and the most popular brands in each country.

Be Advised:

Please use these lists as guides only--ingredients, recipes and production methods can change at any time. In all cases, I have only included those products which the brands and or manufacturers have stated as clearly being free from gluten. This means they contain no barley, rye or wheat or they contain less than 20ppm gluten level and are therefore deemed to be safe. None of the listed products are produced in a factory which handles gluten products, so there should be minimal fear of cross contamination. Gluten Free Frankenstein Macarons

I am a little obsessed with Halloween! I just love the idea of all that candy, the costumes and the cute decorations. Two years ago, I created a pretty simple orange Halloween macaron recipe that was a big hit, but this year I wanted to take my Halloween macarons one step further! These little Frankenstein heads are just the cutest. They're easy to do -- no, really; they are! And they'll be the talk of the table at your Halloween party! Don't worry if you're not the greatest artist, I'm not either! No one's going to care if your stitches are wonky or your mouths are too small; it's all about their incredible taste!

A couple of notes: feel free to make these as green as you'd like. If you're in the UK and not using American gel colours, you'll probably find that due to EU regulations, the colours aren't exactly vibrant. I think it's fine; there's not many E numbers in the gel paste colouring here. If you're in the US, however, your food dye is a lot more concentrated and will probably yield a deeper green. Either way is fine!

Y'all, it's the first day of Fall! Or the Autumn, as my British pals say. This time of year has always been my favourite and the countdown to Halloween is officially on! The chilly night, the fun of dressing up and all the candy you can eat? What's not to love! To celebrate the best season of the year, I whipped up this delicious witch's hat cinder toffee or honeycomb. If you don't have a silicone mould, you can just use a square baking tin and then, once set, cut the honeycomb to break it up.

This vegetarian, vegan and gluten free treat is perfect on Halloween or even on Bonfire Night on the 5th of November. Monster White Hot Chocolate & Vodka Shooters 

Made with white chocolate and as much vodka as you can stomach, these little shooters are all treat and no trick! Hot chocolates might not be the first thing you think of when you hear the word cocktail, but hear me out: these dandy little shooters are perfect for an adult Halloween party. Topped with whipped cream and sprinkles, these shooters will make you feel like a kid again while giving you a slight party buzz!

Paired with savory canapes or other Halloween treats, these shooters would like adorable on a platter, passed around a party. They'd be ideal at a Halloween bonfire, too! The milk retains its heat quite well and the whipped cream serves as a hat to keep the liquid at optimum temperatures. If you're teetotal or want to serve these at a kid's party instead, just leave out the vodka!

Classic British sticky toffee pudding gets paired with rich pumpkin buttercream in this whimsical Halloween cupcakes recipe!

These spooky cupcakes with their whimsical Halloween toppers would be perfect for a Halloween party! They're easy to make--the sponge is light and sweetened with dates and the frosting is a moreish buttercream made with pumpkin puree and lightly spiced with cinnamon and nutmeg.

The sponge is a basic sticky toffee pudding. Sticky toffee pudding is a classic British dessert made with dates and muscovado sugar. It's one of my favorite desserts and every time we go to a pub or restaurant here, I have to have it if it's on the menu.

I made my own pumpkin puree because it's hard to come by the Libby's stuff in the UK, but if you wanted to cut corners, you could use shop bought puree, instead. I have to admit that the buttercream is one of my favorite aspects of this dessert.
