Actifry Scrambled Eggs & "Skillet" Breakfast Potatoes 

I'm a sucker for breakfast food! These eggs are outstanding. They're fluffy and soft and the potatoes are perfectly crisp on the outside and billowy soft on the inside, without all of the butter and oil normally used to make skillet breakfast potatoes. Making scrambled eggs for a few people is easy enough to do in a traditional skillet, but if you need to cook for a crowd (I'm thinking Christmas Eve breakfast), then the Actifry will make it an easy task! That said, there's no other way to cook these "skillet" breakfast potatoes than by ditching the skillet! Opting for the Actifry is the smart option as the minimal oil used makes these potatoes much healthier than the traditional, oil-soaked method.

If you're like me, you might be a bit dubious about eggs in the air fryer, but it really does work! I prefer my eggs scrambled soft so that they're still runny. It's harder to achieve this with an air fryer, so assume the eggs will come out on the more well-done side of cooked. That said, though, they're not hard and dry like usual well-done eggs! With an Actifry air fryer, you use about a tablespoon of oil for frying. This is all you need:

Ingredients:

For the eggs
1/2 cup double or heavy cream
1 measure sunflower oil
3 medium, free-range eggs
salt, to taste
pepper, to taste

For the potatoes
1 measure sunflower oil
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
3 medium potatoes
salt, to taste
pepper, to taste

Toss the potatoes in onion and garlic powder and paprika

Instructions:

Actifry Scrambled Eggs & "Skillet" Breakfast Potatoes
  1. For the potatoes, peel and cube them. Rinse and pat dry and toss them in the onion, garlic and paprika.
  2. Place in the Actifry and drizzle the oil over the potatoes.
  3. Fry for 20 minutes or until the potatoes are fork tender and crispy on the outside.
  4. Place potatoes in a dish, season with salt and pepper and cover to keep warm while you prepare the eggs.
  5. Place the eggs in a bowl with cream and salt and scramble lightly.
  6. Pour the oil into the Actifry and heat for 3 minutes.
  7. Add the eggs and cook for a further 4 minutes.
  8. Season with salt and pepper and serve.

  4. So is the general procedure on cooking eggs putting the tbsp of oil in the actifry first, then wait a few minutes before adding the battered eggs mixture?

    How do the eggs react to the constant paddle motion?

    Is the teflon and oil enough to make it not-stick? Should the actifry be sprayed with some non-stick before doing eggs?
