Slowcooker Pulled Turkey Sliders 

These pulled turkey sliders are my Thanksgiving compromise. They have all the flavor of a classic American Thanksgiving dinner but none of the fuss and there's no mound of leftovers to contend with, either. The turkey is slow-cooked in a rich bath of wine and butter before being shredded and stuffed into hamburger buns slathered with stove top stuffing and tangy cranberry sauce.

Celebrating Thanksgiving as an expat can be a bit tricky. Since Thanksgiving isn't celebrated in the UK, the day isn't a holiday. And since it's always on a Thursday, it means my husband has to work as do other family members and friends, which makes it difficult to invite people over for a mid-week feast. And when it was just my husband and me, we couldn't really justify the banquet of food synonymous with Thanksgiving. So, over the years, I've found ways to sneak in Thanksgiving without actually having Thanksgiving.

That's where these sliders came from. Of course, you could use this recipe with any leftover turkey you have and it'll taste just as fantastic. And if you really like the look of those printable Thanksgiving flags, download them for free!

Ingredients:

For the slow cooked turkey
1kg turkey breast crown
1 onion, diced
1 cup white wine
2 tbsp rosemary
2 tbsp butter
salt and pepper

For the sliders
gluten free burger buns
gluten free turkey stuffing
cranberry sauce


Instructions:

  1. Place the turkey crown in the slowcooker followed by the butter, onion, white wine and salt and pepper.
  2. Cook on high about 5 hours until the turkey is cooked through and tender.
  3. Remove the turkey from the slowcooker and shred it using two forks. Scrape the shredded turkey back into the slow cooker with the rosemary and cook for an additional 20 minutes.
  4. Meanwhile, prepare the turkey stuffing according to the box or use warmed leftover stuffing.
  5. Assemble the sliders by spreading a spoonful of cranberry sauce on the bun followed by some of the stuffing and a heap of the pulled turkey. Drizzle over some of the turkey's cooking juice and serve with potato chips or French fries.
