Gluten Free Deep Dish White Pizza

Pizza night is known around the world for being a quick, cheap alternative at dinner time. And it is! Unless you're gluten free. If you're gluten free, pizza is mostly out of the question. Or if you do make gluten free pizza, you'll have to spend a bit of time in the kitchen creating it. It's true, this isn't one of those "20 minute meals" the world seems to rave over. This pizza will take time, but oh, man, is it worth it!



We kept our pizza simple and covered it with the necessary ingredients for an easy white pizza.You can do the same or let your imagination take over, open your cupboard and create a unique pizza on your own!

My favorite thing about this pizza has to be the onions. They're diced small so they take on a load of flavor in cooking. Plus, if you use sweet onions, you'll get an extra kick of flavor!

Ingredients:

For the gluten free pizza crust
1/2 teaspoon xanthan gum
1/2 teaspoon baking powder
1 tablespoon active dry yeast
2 tablespoons sugar + 1 teaspoon sugar, separate
2 tablespoons olive oil
3/4 cup water + 1/2 cup water, separate
1 cup gluten free all-purpose flour
1 cup rice flour
1 cup tapioca flour

 

For the toppings
mushrooms, sliced
white cheese mix: Edam, Mozzarella and white Cheddar
baby spinach
chicken breast, diced
white onions, sliced

Gluten Free Deep Dish White Pizza

Instructions:

  1.  Preheat the oven to 180c/350f.
  2. Combine 3/4 cup of the water with the yeast. Let froth about a minute. Add the sugar. Let froth 3 minutes more.
  3. Combine the flours, xanthan gum, baking powder, salt and sugar. Make a well in the center of the flour mix.
  4. Stir to combine. Press into a baking stone or pie dish.
  5. Bake 20 minutes.
  6. Prepare the toppings while the crust bakes.
  7. Saute the chicken in butter or oil with the onions until starting to color.
  8. Add in the mushrooms and saute everything until cooked through. 
  9. Toss in the spinach and put a lid on and allow the spinach to wilt.
  10. Arrange the toppings on the pizza and sprinkle over cheese and return to the oven for no more than 15 minutes, to allow the cheese to melt and everything to come together.

  4. I prefer white pizza over red sauces, but if we go out restaurants don't often have it. Problem solved with this homemade pizza! Simply delicious, Anyonita!
