Gluten-Free Millionaire's Shortbread

So this week, I'm cheating. Last week's technical challenge was stroopwafel--super thin Dutch pancakes that require a special waffle press that I could have bagged from Amazon for £25 but didn't think I'd be likely to use it again, so I decided to skip the stroopwafels and opted instead for last week's signature: Millionaire's Shortbread!

#GBBOGlutenFree Millionaires Shortbread Recipe

Millionaire's Shortbread is a classic British treat -- chunky pieces of shortbread biscuits/cookies slathered with caramel and topped with a thin slab of chocolate. They're kind of like Twix candy bars, actually, except the chocolate is tempered and finishes with a crisp snap instead of a soft bite like on a Twix. They're surprisingly easy to make and they make for a great impressive dessert!

Gluten-Free Slow Cooker Chicken Cacciatore

As soon as the weather turns chilly, the slow cooker resumes its autumn and winter home atop my kitchen counter. Last week, we had this decadent chicken cacciatore stew bubbling away for 8 hours one day and it was absolutely delicious! Like any good slow cooker recipe, it's filled with everything you need to keep you full!

Hearty Autumn Gluten Free Chicken Cacciatore Slow Cooker Meal

Now ordinarily chicken cacciatore has olives in it, but this one doesn't because I don't like olives, but if you like them, add them in! And while we're on the subject, if there are things you don't like, feel free to leave them out or swap them--the choice is yours. You've gotta eat it; you should be in control of what goes in it.

Lactose-Free Pumpkin Spice Latte

This time of year all I need is my favourite autumn accessory: a pumpkin spice latte. I hear you laughing, "A drink as an accessory?!" Believe me; with as often as I've got a homemade latte clutched in my hands, it certainly is an accessory! This pumpkin spice latte is different, though, it's completely lactose free--from the frothy milk inside to the crown of whipped cream on top. And I'm warning you: it's pretty much life.

Lactose Free Gluten Free Pumpkin Spice Homemade Latte

Oh and one more thing before we get to the ingredients list, don't be tied down by my measurements. Everybody likes their coffee differently. Use as much sugar as you like or no sugar. Make it a triple espresso if want it stronger or even opt for decaf coffee instead. Your brew; your rules!

There's a running joke amongst coeliacs and it's this: gluten-free bread. Okay, so maybe it's not that bad but gluten-free bread 9 times out of 10 leaves something (a lot of something, in fact) to be desired. Gluten is what makes normal bread lovely and stretchy and indulgent and nice to eat. Take that away you're mostly left with pale rocks masquerading as bread. Still, even with the general challenge gluten free breadmaking poses, I was excited for this week's technical challenge in the #GBBOGlutenFree bake along!

Gluten-Free 9 Hour American Chilli

It seems the weather has suddenly turned frigid here in Manchester! I've swapped ballerina pumps for suede ankle boots and can't dare leave the house without a wrap or a throw. The leaves are changing on the trees and my Instagram feed (come join me on Instagram & get your fill of gluten-free food porn) is overrun with snaps of pumpkin spice lattes. And even though fall doesn't officially kick off until Friday, I've begun to indulge in it just a little bit early this year.

9 Hour Slowcooker Gluten Free American Chili

Autumn was made for hearty meals that cook themselves, leaving you plenty of time to watch the leaves change and curl up with a hot drink. And nothing says autumn in the American south quite like a bowl of hearty chilli, bursting with beans and packed with meat--this is a protein hit that you'll want to indulge in time and time again. Your family will absolutely love this easy gluten free American chilli recipe. Serve it up southwest style with crunchy tortilla chips for dipping and then use the leftovers to fill fluffy baked potatoes the day after; you'll get two meals from the effort of one!

Gluten-Free Vanilla Fortune Cookies

I love a good fortune cookie, and I'm a total fortune cookie purist: none of those crazy flavours for me, and I want my fortune to be an actual fortune, not just halfhearted advice. Although I've always loved these Chinese takeaway delicacies, I never thought to try making them, so I was both excited and a bit apprehensive when I saw this year's Great British Bake Off contestants try their hand at these bent biscuits.

#GBBOGlutenFree Chinese Fortune Cookies Recipe

These gluten-free fortune cookies aren't 100% like normal fortune cookies and that has a lot to do with the flour. As written, this recipe yields a dozen fortune cookies with the texture of shortbread and they're absolutely delicious! Plus, they're so quick and easy to whip up, you'll want to make them every time you opt for a Chinese takeaway!

Considering a meal out in Liverpool? Here are 10 restaurants with options for gluten free diners in Liverpool, Merseyside and on the Wirral.
10 Gluten Free Restaurants in Liverpool, Merseyside and on the Wirral

Liverpool, Merseyside and the Wirral are quickly becoming must-visit destinations for anyone following a gluten free diet. The number of restaurants, cafes and tea rooms offering up suitable options for coeliacs is pretty impressive! You've got the whole gamut in this part of the world: vegetarian cafes with a consciousness about gluten free food, tea rooms serving up award winning gluten free cakes made by a chef with a gluten intolerance and mainstream restaurants partnering with Coeliac UK to ensure their wares are legitimately safe for coeliacs.

Liverpool, with its rich culture and natural tourist trap is showing the country just what it looks like to be coeliac friendly and it's totally winning the game. If you're planning a day out with the Scousers, plug these pit stops into your itinerary for delicious, gluten free food.

Disclosure: restaurants change their recipes, menus and preparation areas at any time and may no longer provide gluten free options. As always, please use this list as a guide and consult with the restaurant before booking or attending as to what their policy is. Finally, please remember that while they may offer a gluten free menu, if the kitchen is not wholly gluten free or if there is no designated area, cross contamination could still occur.

Gluten-Free Mini Espresso Swiss Rolls

Growing up, my favourite snack cakes were oatmeal cream pies and Swiss rolls--twin mini chocolate roulades filled with sweetened cream and covered in a chocolate glaze. They were divine. And of course not gluten or dairy-free. So when I saw last week's technical in the new Great British Bake Off, I was super excited to try my hand at mini Swiss rolls.

Gluten Free Dairy Free Mini Swiss Rolls

Luckily, roulades are often already gluten-free because they don't call for usual flour, so making it dairy free and tszujing it up a bit wasn't too tricky. Hiding inside these mini roulades is just the right amount of espresso powder for added zing.

Gluten Free Halloween UK Sweets and US Candy Lists

Friday, September 1, 2017

Here are the latest lists of gluten free UK Halloween sweets and US Halloween candy from each country's most popular brands in a handy free printable!

When I first emigrated to the UK, Halloween was just beginning to take off as a recognised commercial celebration. While there's still a long way to go before it's celebrated as extensively here as it is in America, it's certainly a nice way to break up the dark nights before proper winter sets in!

Of course, a holiday where eating is a big part of the focus poses potential risks for people with food allergies. Given the nature of how Halloween candy is often given (in small, individually wrapped sweets or candy from a larger package) it can be difficult to remember if a sweet is gluten free or not. To combat this and to ensure you and your children have the best possible gluten free Halloween ever, I've created two handy lists of Gluten Free Halloween UK Sweets and US Candy and Chocolate from major suppliers and the most popular brands in each country.

Be Advised:

Please use these lists as guides only--ingredients, recipes and production methods can change at any time. In all cases, I have only included those products which the brands and or manufacturers have stated as clearly being free from gluten. This means they contain no barley, rye or wheat or they contain less than 20ppm gluten level and are therefore deemed to be safe. None of the listed products are produced in a factory which handles gluten products, so there should be minimal fear of cross contamination. Please also be aware that you download the correct list for your country as some sweets or candy produced gluten free in one country may not be gluten free in the other. Ultimately, always check the packaging and ingredients before consuming any sweets or candy, even if it does appear on this list.
