Gluten Free Dairy Free Valentine's Peanut Butter & Coconut Cookies

I know; I know; you're not meant to play with your food, but Valentine's Day is such a playful and romantic holiday, I couldn't resist! This year, I wanted to create something different and fun for Valentine's Day. I recently started having Tic Tac Toe wars with my 5 year old and while his strategic skills are still in development, it's been fun to be catapulted back to a childhood favourite. And like any cheeky 5 year old boy, my son loves to play with his food, so why not combine the two, right?!

Sweet heart shaped cookies are the epitome of a Valentine's Day treat but I've given the classic peanut butter cookie a delicious makeover! It's gluten free, made with almonds and coconut and suitable for those who can't handle dairy. Add in those fun shapes--hearts and O's--and you've got the perfect ingredients for an edible game of Tic Tac Toe! All you're missing is a game board, but don't worry; you can download the one I made for free!

Ingredients:

For the cookies
1/2 teaspoon vanilla extract
1/2 cup smooth peanut butter
1/2 cup sugar
1/2 cup brown sugar, packed loosely
1/2 cup ground almonds/almond flour
1/2 cup coconut flour
1/2 cup butter -- dairy free or regular
1 egg
pinch of salt

To decorate
cookie icing, pink and white
Valentine's sprinkles of your choice

Instructions:

  1. Preheat oven to 175c. Combine all cookie ingredients in a food processor, pulse until a soft dough forms.
  2. Use a tablespoon measure to scoop a tablespoon of dough and place it on a paper-lined baking tray. Repeat until the tray is filled.
  3. Dip the bottom of a clean shot glass or small glass in granulated sugar and press each cookie ball down.
  4. Cut each cookie with a heart-shaped cookie cutter, removing excess trimmings and returning them to the bowl.
  5. Repeat steps two and three.
  6. Cut each cookie with a small circle cookie cutter. Cut out the inside of the circle with a smaller cookie cutter or an apple corer.
  7. Bake each tray for 8 minutes or until cooked, and allow to cool completely.
  8. Frost each cookie with icing and decorate with sprinkles. Refrigerate or leave at room temperature to set before enjoying a game of Tic Tac Toe!
