Gluten Free Leftover BBQ Chicken Nachos with Roasted Tomatoes

Leftover BBQ Chicken Nachos with Roasted Tomatoes
A few weeks ago, the sun came out in Manchester and the temperature rose to the high 70s for a few days. Like always, everybody grabbed picnic baskets and sunglasses and flocked to the park for lazy afternoons in the sun. We were right there with them, with a picnic and blanket. Instead of making the usual, boring sandwiches, we opted for picking up assorted rotisserie and barbecue chicken from the deli counter. After our day in the sun, I wasn't in the mood to cook and didn't want to throw out the leftover chicken. As a result, these delicious nachos were born.

Oreo Butter

Friday, June 21, 2013

Made with coconut oil, Oreo butter is a tantalizing guilty pleasure that's perfect eaten on its own or swirled into desserts!
Oreo Cookie Butter
The humble Oreo. Enjoyed on its own or dunked into tall glasses of milk. Like many children growing up in the 90s, Oreos were the best part of afterschool. Leaving the bookbag at the door and settling at the table for a handful of Oreos and milk was what afternoons were made for! Nowadays Oreos have evolved from being the classic American sandwich cookie and are in everything--cakes, cheesecakes, brownies, ice cream and even other cookies!

Gluten Free Bacon & Emmental Nids de Tartiflette

Wednesday, June 19, 2013

These crowd-pleasing cheesy potato nests get a punch of flavor from smoky bacon!
Bacon & Emmental Nids de Tartiflette
This recipe, this potatoy, bacony, cheesy recipe is an adaptation from Rachel Khoo's Nids de Tartiflette from The Little Paris Kitchen.

Nids de tartiflette is roughly translated by Rachel as being cheese and potato nests. And that is exactly what they are. Scrumptious little nests that your family will want over and over again.

I made 9 from this recipe, and my toddler ate 1 1/2 of them! Rachel suggests them as an appetizer or a side dish. But I bumped up the bacon, served it with a fresh salad of iceberg, tomatoes, red grapes and pistachios and some homemade garlic bread courtesy of a special recipe and they were very filling!

Rachel's original recipe calls for Reblochon cheese, a cheese from the Alps. She describes it as having a pungent aroma and a nutty taste. An alternative, she suggested, is Brie. Except, I cannot stand the flavor of Brie. So I took inspiration for her nutty comment and went for the nuttiest cheese I know: Emmental. Or, as it's colloquially referred to in the US, Swiss. I'm thinking Edam, Munster and Provolone would all be equally good substitutes too. Keep reading for the recipe!

Tortilla-Wrapped Fiesta Mexican Burgers

Monday, June 17, 2013

Boring burgers get a fun & funky twist with a tortilla wrap!
Tortilla-Wrapped Fiesta Mexican Burgers
In the run up to Father's Day, I deemed the week Burger Week. We had burgers every night except one when I had come down with such an unshakable cold, all I wanted was a Chinese takeaway and an early night in. Other than that, though, it was burgers to the max! And my boys loved them!

We're not talking ordinary ground beef + cheese + a bit of tomato and drizzle of mayo. Oh, no! We're talking burger burgers! Different, unusual, out of the ordinary burgers. Burgers each with a distinct flavor. This tortilla-wrapped fiesta Mexican burger ticks all those boxes. It's absolutely amazing. It combines the homemade taco seasoning recipe I shared with you in the Ultimate Nacho Chicken dish with toasted tortillas. Don't knock it 'til you've tried it; and you've got to try this one!

Best Ever Gluten Free Blueberry Freezer Jam

Saturday, June 15, 2013

Best Ever Blueberry Freezer Jam
Freezer jam. It's all over Pinterest and over many of the food blogs I frequent. Most of you who've made it, swear by it. I see the obsession. It's so easy! My husband's verdict: "This is the best blueberry jam I've ever tasted." And you know what? I think I might just have to agree. That's even after using a bit too much pectin. Which is what gives the jam the look that it's moving. Lol. So, next time round, slightly less pectin for me. But, oh my NOM! This is tangy and sweet and has large bits of blueberries in it! Which is vitally important for me!

Gluten Free Southern Smothered Pork Chops with Kale Crisps and Mustard Mash

Friday, June 14, 2013

This heartwarming, down-home dish hails straight from America's deep south. It's comforting, soul food with a modern twist!
Southern Smothered Pork Chops with Kale Crisps and Mustard Mash
When people suss out I'm an American, there's usually two things they always ask:
  1. Why would you move to rainy Manchester?! and
  2. What do you miss most about America?
I always feel a bit let down by the Manchester comment; I love Manchester and I think it's one of the greatest cities on the planet! In terms of what I miss most, one of the things is the food. I'm a southern gal, bred in North Carolina and one of the things we southerners are known for is our hospitality and drop-dead delicious meals. You'll never leave a southern house hungry. And you'll never get invited into a southern house without being offered sweet tea and some type of baked good.

Although there's no baked goods in this dish, this is a modified version of one of the meals my mom used to make. In true southern style, everything is homemade from the mashed potatoes to the gravy giving it all a big, warm hug! Smothered pork chops with mashed potatoes is one of my favorite dishes and eating it here, thousands of miles from home is a nice feeling. Being able to share this down-home southern cooking with my family is nice as well! I enjoy plying my husband with soul food and one day, when my son is older, I hope he'll appreciate this side of his culture. Okay, enough with all the sentiments. Let's get to the recipe, shall we?!
