Loaded Potato Focaccia

As far as focaccias go, I'm a bit of a staunch traditionalist. Ordinarily, I can't turn down a warm-from-the-oven slice of focaccia flavored with garlic and rosemary and drizzled with olive oil. Resisting the urge to throw garlic and rosemary at this dough was difficult, but worth it!

There's mashed potato in the dough, which helps to keep it moist and the focaccia recipe only calls for four other ingredients, which helps to keep it simple! Although I added fresh chives, cheese and bacon, you could very well top this potato-y focaccia with your favorite jacket potato toppings instead. I also used this authentic 00 Italian pasta flour from Nifeislfe.com. The flour is so soft and pillowy; I was surprised at how big of a difference there is! And the flour was delivered to my door along with a box of other Italian groceries so it was insanely convenient.

I have strict rules about spaghetti. Normally, I prefer it the second day, after it's been refrigerated and rewarmed. It tastes so much better. And two, there has to be bread of some sort. As a kid, spaghetti was always accompanied by buttered slices of Wonderbread and the combination was just delicious. This is how the adults big kids do spaghetti and bread: perfectly al dente noodles with chunky meaty sauce inside buttery, flaky pastry. What you can't see is the insane amount of gooey cheese lurking inside.

Success is the motivation behind many a blog today. Bloggers talk about it pretty much all the time and people who are thinking about blogging base their aspirations around it. 

Being a success doesn't necessarily equate to profitability and monetization. Not for everyone. So it's important for us to establish what this post will and won't do upfront.

This isn't the equivalent of a pyramid get-rich quick scheme. I'm not going to initiate you into an esoteric cult and whisper blogging secrets to you. I'm not going to say, "do this and your traffic will increase by xxx" and I'm not going to rope you into purchasing an "ebook" that's really a Word document full of my opinions.
I am going to show you how I don't let my blog take over my life. I will give you practical advice on how you could do the same or find your own ways to do the same. I will be open and honest and I will try my very best to explain things as clearly as possible, and lastly, I'll let you decide whether you think my blog is successful or not.

Lavender & Rose French Macarons

These perfectly pretty French macarons are so floral they're like eating a sweet flower. That's probably my most favorite thing about them: they perfume your mouth with a lovely floral flavor from both the lavender-scented shells and the heady rosewater buttercream.

Here in the UK, Mother's Day is this coming Sunday and everyone usually can be found queueing up at the local supermarket with arms full of flowers and chocolates, but this year, I wanted to give you another option: something homemade and delicious and still quite floral. The idea for these macarons came from a rose macaron recipe I came across. I loved the idea of a rose macaron but wasn't sure I could handle that much full-on rosiness. So this was a compromise.

This carbonara is so creamy and luscious and incredibly earthy. By now you probably know that we're bona fide carnivores in this house; munching on all the meats from pork to lamb to chicken, but every now and then it's nice to just have vegetables. My favorite thing about this dish is the kale. And then there's the mushrooms that have an earthy taste all their own. And then you get the tarragon. *swoon* If you've never had tarragon with mushrooms ... well, just try it. Tarragon and mushrooms go together like ketchup and mustard.

Collages have become a recurring component on many blogs: they're bloggers choice for displaying featured posts from link parties or when showcasing festive, holiday roundups. They look cool and homogenous and are a fun way to cram a lot of photographs into a single image.

One of the most annoying things about collages, though, is that there's never been an easy way to attach multiple links to them. So bloggers tend to default to having to place links beneath the collage either in clockwise manner or in correspondence with numbered photos in the collage. 

But I'm going to show you a relatively simple method for making every image in a collage a link. It doesn't matter what your collage is of and it doesn't matter if each photo will be assigned a different link. Here's one easy way to make every image in your collage a fully-functioning, clickable link.

I inherited a trait from my mother: I prefer my baked goods slightly doughy and nearly under-done in the center. Brownies, bread rolls and especially chocolate chip and sugar cookies must be teetering on the edge of raw in order for me to enjoy them.

Except for peanut butter cookies. I want my peanut butter cookies crispy and crunchy around the edges and slightly chewy but not doughy in the middle. And I want them rolled in sugar. With a hint of vanilla. And with Nutella. That bit is a new discovery. Warning: these cookies will become your new favorite.

Italian Pear & Mortadella Oven Sandwiches

This sandwich has everything. Absolutely everything you never even knew you wanted in a sandwich: sweet, salty, crunchy, gooey, heavenly. Okay, so that last one isn't really an edible thing, but it's important. Don't judge this crazy concoction by it's contents. I know on the surface it seems a bit strange to put pickles, pears, cheese and deli-shaved cold cuts into a sandwich, but believe me guys, it works. My husband even said this was one of the best sandwiches he's had in a long time.


And he's a staunch pickle hater. I'm not sure this sandwich completely turned him into a pickle convert (I'm not even sure he ate them, now that I think about it, because he took it to work with him). Pickle lover or loather, there's so much more going on between bread that deserves your attention!

Bangers & Mash with Onion Beer Gravy

Bangers & Mash is one of those stereotypical British dishes. A mountain of creamy mashed potatoes is smothered with succulent sausages and draped with rich onion beer gravy. This is comfort food at its finest and it's one of the best ways to celebrate St Patrick's Day!

In this recipe, I used chipolata sausages, which are French and not Irish at all, but you could use Irish sausages. Or your British sausages. It doesn't really matter, just use your favorite. The gravy is super easy to make and the addition of a dark ale gives it a nice, rounded flavor.  Then there's the mash. From the packet is completely unacceptable! For my mash, all you need to do is boil potatoes and pulverize them. Easy and much tastier than the stuff from the packet.

Easy St Patrick's Day Cupcakes for Two

Couples and small families tend to get left out of the baked goods loop. Junk food seems to come in dozens or half dozens, so one or two things usually happens in my house:
  1. We each eat two of everything so that nothing's wasted, which means more sugar, which isn't exactly healthy or
  2. We eat our fill and then leave the rest in the snack basket with the intention of finishing it off later, but never actually getting around to it until it's time to toss it in the bin.
