IBS or Irritable Bowel Syndrome is a digestive issue plaguing millions of people around the world and one of the most effective methods for combating the uncomfortable effects of an IBS flare up is to follow a low FODMAP diet.

FODMAPs is an abbreviation for a group of complex molecules found in many foods called Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. FODMAP is definitely easier to pronounce than all that! Some people have problems absorbing these molecules; when this happens, the molecules become a food source for bacteria that naturally lives in the large intestine. When the bacteria digest or ferment the FODMAPs,  symptoms of IBS occurs.

It's 5 o'clock somewhere & the perfect time to unwind with a grown-up drink! Vodka is my spirit of choice--at all times there is a bottle in my freezer, ready to add a bit of fun to a bowl of tipsy boozy popcorn or blitz with berries for a frozen vodka martini.

Vodka mojitos are a perfect way to update a classic mojito and ideal for anyone who isn't a fan of rum. As with most cocktails, this one is super versatile--throw any flavours at it that you'd like. Try skipping the oranges and adding a medley of berries, or get rid of the fruits altogether and go with fresh cucumber or even decadent chocolate syrup. But if you want an easy, sweet and citrusy take, then you can't go far wrong with this recipe with fresh orange and lovely smooth honey!

Ingredients:

For the vodka mojitos
1 lime, juice of
1 orange, peeled, seeded and segmented
2 tablespoons honey
240ml vodka
500ml orange squash, diluted
fresh mint

A few weeks ago, a friend came over, bearing the gift of a flowering mint plant. The plan had been to spend the afternoon chatting and sipping mojitos and eating gluten free crackers slathered with the most decadent French cheese. Without any white rum in the house, we ended up making vodka spiked lemonade instead--not a difficult compromise, let me tell you! Still, I was left with this gorgeous mini mint bush that just keeps growing and growing and growing. So, every now and then, I prune it back and throw all the leaves into a recipe. Still with no white rum (I really need to add it to the shopping list!) these vodka mojitos were born.

Instructions:

  1. Put the lime juice, honey and orange segments in a cocktail shaker and muddle
  2. Add the mint leaves and muddle again until fragrant 
  3. Add the vodka and stir
  4. Divide into two glasses with glass and pour over the orange squash
  5. Garnish with mint leaves and an orange segment

Gluten-Free Coconut Lime Chicken Curry

This curry is basically a cheat's version of a Thai green curry. It's another one of those 20 minute meals that is perfect for whipping up any day of the week! Plus, the natural sweetness coming from the coconut milk and the teeny amount of optional sugar, makes it really child-friendly. I love a good fiery curry, spicy enough to make your nose run and your eyes water. My husband isn't too keen on spicy foods, so this curry is a nice compromise. It's mild and gentle with coconut and lime, but also, I can easily dice up some more green chilies to kick my portion up and make it eye-wateringly spicy.

This quick chicken curry recipe is dairy free, gluten free, paleo and low fodmap!

Gluten Free One Pot Salmon Lemon Pilaf

This dish just scream spring and early summer. It's a perfect light option for warmer weather that is still filling and full of all the nutrients and goodness you need. I love the way the flaked salmon adds another dimension to this dish and the fresh squeeze of lemon with the zest is pretty unbeatable. We kept things simple and dairy free in this version, but you could totally grate over a nice hard cheese like Pecorino or Parmesan for an added layer of depth.

Ingredients:

For the pilaf
1 white onion, diced
1 garlic clove, diced
1 lemon, zest and juice
2 tablespoons olive oil
200 grams long grain rice
240 grams boneless, skin-on salmon fillets
250ml water
250ml chicken stock
fresh parsley
black pepper*
sea salt (optional)

Salmon Rice Pilaf Dish

Pilaf is super simple to make. It's just the generic name for any type of rice dish that's prepared by first toasting rice in fat before boiling. So many rice dishes start out this way like this 20 minute chicken and chorizo paella, or this gluten free risotto and my take on super easy Mexican rice.

Instructions:

  1.  Heat one tablespoon of the olive oil in a pan and fry the salmon for about 30 seconds on each side to sear. Don't worry if some of the skin is stuck to the bottom of the pan, it'll add more flavour! Remove the salmon from the pan and set aside.
  2. Add the remaining oil to the pan and fry the garlic and onion until fragrant and translucent, no more than five minutes.
  3. Add the rice and stir to coat in the oil and allow to slightly toast.
  4. Add the chicken stock and the water and cover and simmer until the water is evaporated, about 13 minutes.
  5. Flake the salmon into good-sized chunks while the rice simmers. Once the water has evaporated, stir through the salmon and a good bit of black pepper. Cover and remove from the heat and allow to rest about 10 more minutes.
  6. Stir in the lemon zest and juice, sprinkled over fresh parsley and great over cheese (if using) and serve.
