Recipe Copyright Policy & Attribution ... the Right Way!

Most people don't realize that recipes are copyrighted manuscripts and documents that require proper attribution just as other texts do. 

Recipes can be a bit tricky to pin down in terms of attribution because so many recipes are timeless classics, are passed on via word-of-mouth or are simply not written down. All of these instances make it difficult to properly give credit to the recipe's developer.

Websites like Pinterest and Facebook don't help with the problem because many people copy and paste recipes in the body of a post or pin, not citing the blog or website it came from. Even though it's not widely discussed, there is an etiquette to sharing and distributing someone else's recipe. There are legalities to consider and to be aware of for both food bloggers and blog readers. The purpose of this post is to clearly explain what the law is regarding recipe copyright and attribution and to give clear examples of how to properly attribute a recipe.

Crock Pot Beef Tortilla Soup with Crispy Tortilla Strips 

Tortilla soup is like slurpable taco salad: warm and cheesy and full of punch from fresh coriander. It's comfort food at its very best and it's absolutely brilliant. I love a good bowl of chicken tortilla soup, but I wanted something different. I didn't want the clean taste of boiled chicken, I wanted the meaty taste of beef!

This is one of those soups that changes each time I make it. Sometimes I use sweet corn, sometimes I add in fresh cherry tomatoes toward the end. Sometimes I use chicken. Sometimes it bubbles away on the stove for 30 minutes. It's versatile. But my favorite way to have tortilla soup is just like this: slowly cooked all day in the crock pot with tender beef and finished with fresh coriander, black pepper and crispy, crunchy seasoned tortilla strips.

Crock Pot Pumpkin Risotto 

This crock pot pumpkin risotto combines two of my favorite things about Fall: pumpkins and my slow cooker! As soon as the weather gets chilly and the leaves start to change color, the crock pot takes prominent space on my counter top. I probably cook with it at least three times a week in the Fall and Winter. And at this time of year, every time I go to the grocery store, I come back with a pumpkin or squash. I just can't resist.

The day I made this, I wanted something comforting but easy to make. A rummage through my cupboards resulted in a forgotten bag of arborio rice and I was sold on the idea of an indulgent, comforting risotto. I wasn't sold on the idea of standing at my stove for 20 minutes, lovingly stirring the temperamental rice into subjection, however. I'd heard about making a risotto in the oven, but I think it gets too dry and crisp on top. The next best thing, of course, is the slow cooker!

I love how tender the rice is while still being just al dente. The grains swell almost to the size of orzo with the delicious liquid. I added in a bit of verjus with the white wine for added tang and I think it works really well with this dish. Especially if you spritz the risotto with a bit more verjus just before serving. It's mouthwatering.

Oven Roasted Pork & Warmed Mixed Grapes with Cheshire Discovery Applesauce 

This roast dinner is your quintessential Fall meal. Late season Cheshire Discovery apples lend their distinct sweetness to rustic applesauce, the crackling on the pork is salty and has the perfect crunch and the warmed grapes, dressed in drippings from the roast and a verjus reduction are both sweet and tart.

I served this on a Sunday after letting the pork rest overnight in the fridge, the fat scored and stuffed with fennel and bay, prepping itself for epic crackling. This dish is so good. Divinely good. Worth the extra pennies it cost to import the verjus from France and made extraordinarily special by the fact that we picked the apples by hand not more than a week before from a local orchard.

It's a showstopper: the perfect pork, the enticing balance of sweet and sour, salty and bitter. This is comfort food, exciting and interesting but full of love and memories. It's what food should be about. If you never try another recipe on Anyonita Nibbles, you've got to try this one. I swear, you'll never want pork any other way.
