There's a soft spot in my heart for eclairs and these triple chocolate eclairs are no different. I'd been toying around with the idea of making chocolate pate a choux (choux pastry) and thought Valentine's would be the perfect opportunity, what with chocolate being the ultimate aphrodisiac, food of love. Chocolate mousse and a crunchy biscuit base get covered in strawberry chocolate and topped with a white chocolate drizzled strawberry for an indulgent gluten free Valentine's dessert!

Waiting for the mousse to set is the most difficult thing about this dessert. If you make them late in the day and give them all night in the fridge to set, they'll be ready for pouring over the chocolate and topping with strawberries in the morning. Depending on the size of the mold you use, this recipe will make six to ten mousse crunches. Enjoy them after a special Valentine's Day dinner for a rich, aphrodisiac treat!

Zuppa Toscana Olive Garden Copycat Recipe
Zuppa Toscana is rustic Italian soup influenced by the flavors of sun-drenched Tuscany. It's made with big chunks of tender potatoes, sausages (generally Italian, though you could use whatever you had on hand) and leaves of kale. I used cavolo nero, my favorite type of kale because it has an intense, earthy taste.If you reduce the amount of potatoes and sausage called for, this soup would be perfect for a light lunch. Keep the amounts I've specified and it'll be filling for dinner, too. Serve with good, chunky bread for dunking and tuck in for a delicious and easy soup you'll make again and again.
