How to Make Rubbed Sage

I am extremely excited about today's post! It's my first post utilising the fruits of my Plantui Smart Garden: it's harvest time! The first plant I harvested was my sage! It smelled so delicious whilst it was growing; I couldn't wait to get my hands on it and use it! Just look at how beautiful and vibrant the sage was:

With American Thanksgiving right around the corner and Christmas not far behind, I thought I'd share a recipe for how to make rubbed sage. Sage features prominently in both Thanksgiving and Christmas meals (usually springing up in stuffing or sausages et cetera) and it's one of my favourite herbs.

Rubbed sage is ordinary dried sage that has been rubbed gently to fluff the edges of the leaves or into a fine, fluffy powder. The second way tends to be what's sold commercially--fluffy clouds of sage great in baked goods like savoury scones. But I love sage and prefer it to be a bit less airy, so you'll notice in this recipe that I don't rub the sage as much as you might have expected. Feel free to continue to rub your sage until you're left with a fine powder if that's how you prefer it.

Growing up in the Sandhills of North Carolina, barbecue was a way of life.Summer is always defined by finger-lickin' barbecue sauce, pig pickin's with piles of meat and ribs and a warm, gentle breeze. Living so far from home, it's these memories I miss most and these things that I try to share with my family, giving them a piece of who I am and where I came from: these moments that define both my culture and who I am.

We are ribs people. We'll get stuck into a plate of ribs: be they beef, pork or lamb. We just ask that they're doused in sticky sauce! Tuck a napkin into the collar of your shirt, prop yourself up at the table by your elbows and have the wet wipes on standby. Back home ribs are cooked one way: on the barbecue grill in the 30 degree heat of my hometown.

Gluten Free Peri-Peri & Lime Roasted Chicken

Peri-peri seasoning is either a rub, sauce or spice mix dominated with the seeds from peri-peri chillies, also called bird's eye chillies or piri-piri chillies. This recipe uses shop-bought gluten free peri-peri rub to marinate and roast the chicken. Slices of lime are added during cooking to help the chicken retain moisture and succulence. Brown sugar is added to tame the spiciness.

This chicken is amazing! You won't even realize it's not been properly deep fried--you get all of the crunchiness and juiciness of proper deep fried chicken without the excess grease and general unhealthiness. That's a big plus. This chicken was accidental in that I hadn't planned on making it. I was getting food ready for a barbecue picnic when the skies turned gray and big clouds rolled in.

Living in the UK, you become quite adept at having a stream of rainy day back plans to hand, especially when it comes to barbecues and picnics! We were planning two barbecues, to take advantage of a short stint of glorious weather; the first barbecue went off without a hitch. The second, not so much. With gray clouds threatening to burst at any moment, we needed a back up plan and quick.

Have you ever tried pork loin steaks? They're basically boneless pork chops that are lean and are trimmed of most of their fat. When I'm in a rush or don't want to spend ages in the kitchen, I'll opt for this cut of pork as it cooks quite quickly and is juicy, too.

This recipe is one of those perfect, midweek meals that taste like it took hours to prepare. And you only need four ingredients to make the pork steaks and gravy! I was really impressed with the Schwartz Season-All Herb and Spice Blend that I used to make these. The combination of herbs and spices is perfectly balanced and really quite flavorful. I was worried about it being reduced salt, but I didn't need to add salt at all!

You can tell from my herb and spice rack that I love Schwartz's products,especially their spices as they tend to have a longer shelf life than shop brands. So I expected to be pleased with this blend and knew the level of quality to expect. On all accounts, I was satisfied.

I finished the dish off with a quick gravy that really helps to elevate everything and tie it all together. Plus, by using more of the herb and spice blend in the gravy, everything tastes complete and moreish. And it doesn't take ages to prepare! What more could you want for a weeknight meal?

I've made this dish twice, once using plain, unflavored yogurt and once using Greek yogurt, but I prefer the tang and bite of the Greek yogurt. Clementine and coriander is an unusual combination, but unbelievably refreshing and perfect for summer! Often thrown together in salads, chicken and clementine are complement each other perfectly--the zesty burst of the citrus enlivens the somewhat bland chicken. The combination of coriander (cilantro) and chicken is far less radical but just as delicious. Combining all three result in a trifecta of summery deliciousness that beckons after a long, lazy day in the sun.

Inspired by a recipe I'd seen repeated all over Pinterest for margarita chicken, I loved the idea of incorporating the flavors of a classic drink into a family-friendly meal time. I also wanted something at little less flamboyant than the 28-ingredient recipe that inspired this meal. Are you kidding me?! Who has time to make a meal for a family that requires 28 ingredients? No beuno!

My take on this recipe is family-friendly, quick to whip up after a long day and only requires 10 ingredients without skimping out on the flavor! Even better is everyone loved this meal including my toddler, Callum. That's got to be a win, right?

Every now and then, the stars align and you see pins for the same style of recipe dozens of time in the space of just a few hours. When that happens to me, I take it as a sign from the food blogging gods to get my butt in gear and put that recipe on the menu! That's exactly what happened with my ultimate nacho chicken. As a result, this recipe was inspired by about six similar dishes, but I've really jazzed it up a bit and made it my own.
